Indian Winter Vegetable Soup

This soup is full of nutrients. This is very good recipe for someone who is feeling down.
Try this recipe, I bet you will love it.

Ingredients:
Ivy gourd / Tundli
Bottle Gourd / Dudhi
Ridge gourd / Turiya
Green beans
Parwal
[Note: take 300 gms of all above vegetables]
Drum sticks: 1 big or 2 small
Tomato: 1 medium
Mung dal: 3 tbs
Sugar: 1/2 tbs
Lemon juice: 3 tbs
Freshly crushed black pepper
Salt to taste

For tadka:
Ghee: 2 tbs
Cumin seeds: 1tbs
Asefoetida to taste

Preparation:
Wash and clean all the vegetables. Cut them into big pieces. No need to peel or deseed any vegetables. Put all of them in pressure cooker. Clean and wash mung dal. Mix it with vegetables. Pressure cook for 4 pressures.

Let the pressure release by setting the pressure cooker aside for 10 minutes.

Open the pressure cooker once the pressure is released. Open the cooker and let the vegetables cool down.

Remove access water and keep it aside for later use. Blend them all together to make smooth paste. Take sieve with large holes and lightly filter all the fiber of the vegetables.

Take vegetable paste into a pot and heat it. Add salt to taste, lime juice, pepper, sugar. Add water if necessary. Simmer it till once boil.

In round small vessel heat ghee, add cumin seeds in steaming hot ghee. Add asefoetida once cumin starts to crackle. Add this to soup. Mix well.

Serve hot.
