Clementine yogurt salad

Yogurt salad/ raitas can be of various types. One of my favorite is pineapple raita. It is important to add variety to your daily food. If you have sweet clementines at home try this easy raita.

Serves 2.
Sweet seedless clementines: 2
Plain yogurt: 4 table spoon
Cucumber: 2 inch long
Carrot: 1 small
Mint leaves: 7-8
Salt to taste
Sugar: pinch or two

Wash and peel carrot. Wash cucumber. Clean mint and wash mint. Dice cucumber and carrot into small cubes and fine chop mint. Peel clementine and cut them into cubes.

In a bowl, mix yogurt, salt and sugar and mix well. Add mint, cucumber and carrot and mix well. Add clementine just before serving and give it a good mix.
Garnish with orange zest and serve chilled.
