This is simple time saving pav bhaji recipe. Lots of vegetables and easy to make in day to day life. For those who do not know meaning of Pav Bhaji. Pav means Bread and Bhaji means Curry. Pav bhaji is staple food or junk food of Mumbai. If you have visited Mumbai and not eaten pav bhaji, my dear your trip is wasted. I can't imagine world without pav bhaji.
In London I don't get proper pav, I have to use burger bun most of the time. I have now switch to wheat bread. My mom used to feast bhaji with dosa and pav bhaji dosa became my favorite dish :).
Ingredients:
Onions: 1 large
Garlic clove: 5-6 (3 table spn paste)
Tomato: 3-4 large
Green pepper: 1
Cauliflower: 1/2 cup
Potato: 1 medium
Green peas: 1/2 cup
Carrot: 1
Green beans (fansi): 1/2 cup
Salted butter: 2-3 table spn
Oil: 1 table spn
Red chili powder: 1-2 table spn
Pav bhaji masala: 2-3 table spn
Freshly crushed pepper: 1 table spn
Lime juice: 3-4 tbl spn
For garnish:
Chopped coriander
Chopped onions
Butter (optional)
Lime juice (optional)
Eat with:
Pav or Burger bun or Plain white or brown bread or chapati.
Preparation:
Wash and cut cauliflower into large pieces. Wash, peel and rough chop potato.
Wash, peel and rough chop carrot. Wash and remove ends of green beans and rough chop it. Take green peas. Boil all the vegetable in pressure cooker till two pressure.
Once vegetables are boiled add washed and rough chopped tomato.
Crush it into gravy after the vegetables have cooled off.
Peel and fine chop onions. Peel and make garlic paste.
Wash and fine chop green pepper.
Take a pan, add butter and oil together. Once hot add red chili powder. This will give pav bhaji nice red color. Use chili powder of good quality.
After one minute add garlic paste and onions. Saute until onions are soft. May be upto 3-4 minutes.
Add green pepper. Saute till peppers are soft. Another 3 minutes.
Now add gravy and add salt to taste. Add pav bhaji masala. Mix well. For extra flavor add extra one table spoon of butter. You can skip this if you do not want to add extra calorie to your diet. Lower the flame and let the gravy cook for 10 minutes.
Add freshly crushed pepper and lime juice and mix well.
Garnish with coriander, onions and butter (optional). Serve with nice buttered pav/bread of your choice.
