Ingredients:
Broccoli: 1 cup
Yellow pepper: 1
Red pepper: 1
Onion: 1 medium
Sweetcorn: 1/2 cup
Plum cherry tomatoes: 8-10
Basil leaves: 12-15
Freshly crushed pepper: 2 table spoon
Salt to taste
Olive oil
Penne pasta: 1 cup
Water: 2.5 cups
Salt to taste
White sauce Ingredients
Preparation:
Cook vegetables:
Wash peppers and broccoli. Peel onions. Dice vegetables in 1 cm. Cut broccoli florets and cut it into long pieces.
Heat pan and add 1 to 2 table spoons of olive oil. Add freshly crushed pepper and let it splutter. Now add onions and cook on high flame.
Let onion burn a little. Add broccoli and stir continuously. After a minute or two add peppers and sweetcorn.
Stir for 4-5 minutes til vegetables are soft. Add salt to taste.
Add cherry tomatoes when vegetables are almost cooked. Add chopped and full basil leaves.
Stir till tomatoes get slightly soft. Keep aside cooked vegetables.
Note: Cook white sauce and pasta parallel. Pasta cooking doesn't need much attention.
White sauce:
For recipe of white sauce
Once the white sauce is cooked add vegetables in it.
Pasta:
Follow the link to cook perfectly cooked pasta. Once the pasta is cooked.
Add them to white sauce with veggies.
Add little bit of pasta liquor to white sauce. Leave on no flame for 5 minutes so pasta absorbs all flavors. Serve hot. For extra kick add chili flakes and enjoy.
