Sev puri

Sev puri is my most favorite chaat item. I can say this tops the list and not paani puri. Sorry to all paani puri lovers.

Ingredients:
Sev puri's puri: In one dish usually 6-8 puris are served. One dish will serve one adult. Depending on how many servings are are making take the puri quantity.

For filling:
Onion: 1 medium
Potato: 1 boiled
Fried channa dal
Fried spicy peanuts
Chaat masala to taste

Chutney:
Garlic chutney (see recipe from my blog)
Tamarind (imali) / khajoor (dates) chutney( see recipe from my blog)
Coriander chutney / mint and coriander chutney ( see recipe from my blog)

For garnish:
Naylon sev: 200 gms (if you can't find this usual sev will do)
Row mango: 3-4 tbs grated
Coriander to garnish

Preparation:
1. Peel and fine chop onions.

2. Boil and mesh potato.

3. Add onion and chat masala to taste to meshed potato and mix well.

4. In the serving plate keep one puri in the center and then keep 5-6 puri around it.

5. Add leom size potato mixture on each puri. Add 5-6 channa dal and 3-4 peanuts in each puri's potato mixture.

6. Now add khajoor/ tamrind chutney over each puri. Same way add garlic and coriander mint chutney on each puri.

7. Take sev in hand and add enough to cover potato. Do the same for each puri.

8. Sprinkle chaat masala on the sev and garnish with row mango and coriander.

9. Enjoy as soon as possible otherwise puri will become soggy.
