Burritos

I learnt this recipe when I was working at Moorgate and there was this Burritos stall at Barbican market. Me and my boss used go and eat this regularly and I thought of trying it at home and feed my husband. This turned out to be a hit and we enjoy it occasionally. Very tasty and easy to make. Fantastic option for meal when friends come down.

Ingredients:
Tortillas: 4
Tomato: 1 medium
Onion: 1 small
Iceberg lettuce: 1 cup
Coriander: handful.
cheddar mature cheese: 1 cup grated
Avocado guacamole: 200 gms
Sour cream: 200 gms
Aduki beans: 1 tin.
Mexican rice: 1 bowl cooked.
Jalapeno: Few
Any hot sauce of your taste. (Maggie hot and sweet / Nandos hot garlic sauce)

Preparation :
Wash and fine chop tomato. Peel and fine chop onions. Roughly chop iceberg lettuce in small pieces. Wash and fine chop coriander. Mix all in a mixing bowl. Add salt if you like.

Open aduki bean tin. Remove it in microwavable container and warm it for a minute in
microwave. Let it cool off for 5minutes.

Cook rice and drain excess water and let it cook off. Mix rice and aduki beans.

Warm tortilla one at a time in microwave. Follow the instructions given on the pack. Normally for 20-30 seconds are enough. When you warm tortilla on a plate moister get accumulated on the plate. so wipe that off.

Add 2 tbs of beans and rice at the center of tortilla and along the length.
Add 1-2 tbs of salad on top of the beans. Add cheese, sour cream and guacamole on top. Add couple of jalapenos. Add few drops of hot sauce along the mixer as per your taste.

Now fold it as shown in photo

and fold from the top also and flip over and ready to serve.

Eat with fork and knife :). I am sure you will love it.
