Moroccan salad

Used the same couscous you cooked for stuffed peppers to make this salad.

Cucumber: 1/2 cup diced
Tomato: 1 medium
Parsley: 10-12 sticks
Couscous: 1-2 tbs
Salt to taste:
Olive oil: 1 tbs
Lime juice: 2 tbs

Wash cucumber, tomato and parsley. Fine chop them. Cook couscous if not ready.
Mix everything together. Add salt to taste.
Mix salad in olive oil and lime juice before serving.
Serve with pitta bread, humus or stuffed pepper.
