Mexican bean burger

Ingredients:
White sauce:
Water: 2 cups
Plain flour: 1 table spn
Salt to taste:
Butter: 1 table spn

Burger:
Potato: 1 medium
Red onion: 1 small
Red capsicum: 1/4
Boiled red kidney beans: 200 gms
Green beans(fansi): handful
Frozen sweet corn: handful (defrost it)
Salt to taste:
Olive oil
Coriander: handful
Jalapenos: 4-5 (optional)
Breadcrumbs: 1 cup
Freshly crushed black pepper: 1-2 table spn

Preparation:

Getting the burger ready:
Boil, peel and mesh potato.

Peel and fine chop onion. Wash and remove ends of green beans and cut them into thin slices. Wash and fine chop red pepper.

Clean, wash and fine chop coriander.

Heat pan, add 1 table spn of olive oil. When oil is hot add freshly crushed pepper 1 table spn.
Add onions when pepper starts to splutter. Add green beans and let it cook for 2-4minutes.
Add capsicum, corn and rajma. Cook for another 4 minutes. Add salt and add more pepper for the zing. Stir well and mesh rajma. All the water should be brunt by now.

Keep the mixture on a plate and let it cool off.
In a bowl take meshed potatoes, coriander, chopped jalapenos and add the red kidney mixture once its cooled off. Add extra salt if required.
White sauce:
Warm 2 cups of water. Sieve 1 table spn of plain flour.
Heat the pan, add 1 table spn of butter. Add 1 table spn of plain flour after the butter is melted. Stir well. Add salt to taste. After one minute add warm water slowly. Keep stirring and keep adding water till you get the nice thick liquid consistency. Let the mixture cool off.
Note: Do not prepare white sauce in too much advance as it tends to get thicker.

To make burger:
Add one table spoon of cold white sauce into burger mixture. Add 1/2 cup of breadcrumbs. Add extra salt if required. Mix well. By now mixture should be nice and thick.

Heat the pan. Add some olive oil on it.

Take extra breadcrumbs in a plate. Take white sauce in a plate. Make round burger roll it in white sauce
and then breadcrumbs.
Place burger on hot pan.
Cool on each side until golden brown. When ready flip the side and spread more oil. Cook until golden brown.
This burger can be enjoyed with cheese slice, lettuce, beef tomato in a buttered bun or own its on. Tastes nice and crispy. Or just have it with boiled vegetables.
