Chickpeas salad

For vegetarian choice of protein are very less. To balance out carb and protein intake gets difficult.

Chickpeas are very good source of carbohydrate, protein and fiber. They are high source of Calcium and Iron as well. However they are also high in fat. These are good fat, needed for proper brain functioning so eat them in limits. Take care of the portion size.

Here is one very simple salad recipe. I hope you will enjoy it if you are chickpeas fan. This will give you feeling of fullness.

Serves 2
Ingredients:
Chickpeas: 350gms boiled
Onion: 1/2
Tomato: 1 small
Coriander: handful
Lime juice: few drops
Salt to taste (or avoid it)
Red chili powder: few pinch

Preparation:
Soak chickpeas for up to 6 hours. Boil them or use the tinned ones.

Note: If you are using tinned chickpeas, remove the tinned liquid and give it a nice wash with fresh water. I have seen lots of people use the tinned water in cooking. It is basically with preservatives and salts so best is to rinse it.

Peel and fine chop onions, wash and fine chop tomato and do the same for coriander.

Mix it all with chickpeas. Add salt to taste, red chili powder and lime juice. Enjoy it hot or cold.
