Mini uttapam are great to serve kids or even as a starter for your guest. Dosa batter has rice, dal and by adding vegetables it is a complete meal. It is even great for snack or breakfast.
Ingredients:
Dosa batter
Capsicum: 1/2
Tomato: 1
Onion: 1/2
Cabbage: 1/8
Ginger: 1/2 inch
Green chili: 2-3(optional)
Salt to taste
Sugar: pinch (optional)
Garam masala: pinch (optional)
Preparation:
Dosa batter has different consistency for uttapam. It is slightly thicker than dosa.
Wash and peel all vegetables and cut them into very fine pieces. Add them all to the dosa batter.
Crush ginger and green chilies and make a paste and add it to the batter.
Add sugar, salt, garam masala and mix well.
Heat the pan and wait til its smoking hot. Reduce the heat and apply wet tissue all over the pan. This will allow the grease to come off the pan and will make the pan surface hot.
Take little quantity of uttapam and spread it, do one just to check how uttapam are turning out.
Apply oil and flip once edges are turning brown. Cook for another 1 minute.
Do the same for rest of the batter. Add more uttapam around the pan do reduce the cooking time.
Serve hot with coconut chutney.
