Ingredients:
Maida (plain flour): ½ cup
Corn flour: ¼ cup
Rice flour: 2tbs
Ginger garlic paste: 3tbs
Green chilly (hot ones): 6 - 7
Baby corn: 10-12
Spring onion: 3-4
Capsicum: ¼ cup of thin slices
Vinegar: 1tbs
Dark soya sauce
Black pepper powder: 2tbs
Corn flour water: 2-3tbs and add ½ cup water make smooth paste.
Ginger garlic: finely chopped 2-3tbs
Oil
Preparation :
Mix maida, corn flour, rice flour, salt, ginger garlic paste. Add finely chopped chilies 3-4. Mix well. Add water to make the consistency well enough such that batter fall from the spoon. Now add 3 tbs of dark soya sauce to the b batter.
Wash baby corn, cut them into 1 inch long pieces. Boil them in salted water till they are slightly soft. Insert the knife in baby corn to check they are slightly soft. Drain excess water and dry baby corn pieces. Add them into the batter and mix well such that batter is nicely coated on each piece.
In a deep pan take oil enough to fry baby corns. Heat oil till fumes starts coming out from the oil. Add the baby corn pieces coated with batter one by one into the hot oil. Reduce the flame to medium and let it fry till they are golden brown. Remove it from oil and put them onto a plate covered with cooking tissue paper to drain out excess oil.
Wash, finely chop spring onions fully and keep the leafy side aside. Wash and chop green chilly 3-4 in juliennes.
Take a wok, heat it on high flame. Once the wok is extremely hot, add 3tbs of oil leave it till oil is hot. Add pinch of Chinese salt (aaginomoto) once the salt starts to crackle add finely chopped giner garlic, juliennes of green chilies and leave it till chilies start to change color. Add finely chopped spring onions without leafy part. Stir it for 1 to 2 minute. Add capsicum and stir it for 1-2 minute. Add Soya sauce 3-4 tbs, add ¼ cup of water. Let the water come to a boil. Add salt to taste and mix well. Add black pepper powder. Add corn flour watery paste to the gravy and cook till the gravy thickens. Add fried baby corns into the gravy. Add vinegar. Cook for another 2 inute and stir continuously. Reduce the flame if needed. Garnish with leafy part of onions and finely chopped coriander.
Also make: Chili gobi, paneer chili.
Use the same preparation for paneer and gobi. Do not boil them like baby corn.
