Mushroom pulav

Serves: 2
Ingredients:
Cumin seeds: 1tbs
Fennel seeds / rough fennel seed powder: 1tbs
Turmeric powder: 1 tbs
Mushroom: 1 cup dice
Green chili: 2-3
Garlic: 2 cloves
Basmati rice: 1 cup
Salt to taste:
Garam masala: 1 tbs
Ghee: few drops
Oil: 3 tbs
Black Peppers: 4-5 seeds
Cinnamon stick: 1 inch

Preparation:
Wash and wipe off mushrooms. Cut them in small pieces. Peel garlic and cut it into thin slices. Wash and cut green chilies into 1 centimeter small pieces.

Soak rice in water for 10 minutes and wash it twice with water. Boil 3 cups of water.

Heat pressure cooker or large pot with steam facility i.e. a steam outlet in the lid.

Add 2-3 tbs of oil. Add peppers, cinnamon stick and cumin seeds. Add garlic and green chili once spices starts to splutter. Add mushrooms and fennel seeds after one minute. Let mushroom saute in oil for a minute.
Add rice. Mix it well so rice gets oil coating before you add boiling water.
Add 2 to 2.25 cups of water. Add turmeric powder, salt to taste and garam masala and mix well. Add few drop of ghee.
Cover the pot with lid and cook on high flame for 5 minutes. Reduce the flame to medium and cook for another 10 minutes. Remove the lid and check if rice has cooked fine.
Mushroom pulav is ready when the rice is cooked. This will take 15 minutes. Serve hot. This is good tiffin box recipe too. Just be careful of the lovely smell of pulav will make people in your office make hungry :).
