Roasted vegetable pasta

Ingredients:
For roasted vegetable:
Onion: 1 medium
Courgette: 1/2
Red pepper: 1/2
Broccoli: 150 gms
Garlic: 1 clove
Basil leaves: 20 leaves
Olive oil: 2 tbs
Freshly crushed peppers: 2 tbs

For gravy:
Sieved tomato passata: 200 gms
Garlic: 1 clove
Freshly crushed peppers: 2 tbs
Olive oil: 1-2 tbs
Basil leaves: 12 leaves
Salt to taste:
Pesto sauce: 1 tbs

Pasta:
Pasta: 1.5 cups
Water of 2.5 times amount
Salt to taste:

Preparation:
For roasted vegetables:
Wash and cut broccoli, peppers, courgette. Peel onions and cut dice them. Crush garlic clove. Wash and roughly chop basil leaves use your hands if possible.

Pre heat over on 220 degree for 10 minutes. Boil broccoli for 3-4 minutes and drain it off.


In a mixing bowl add 2-3 tbs of olive oil. Crushed garlic, freshly crushed peppers roughly chop basil leaves.

Add all the chopped vegetables in the mixture and marinate for few minutes.

Set the oven tray with a foil and apply a layer of oil before placing all the vegetables.

Lay all the tray and place tray in oven. Roast it for 20 minutes on 180 and last 5 minutes on 220. Keep checking in between to make sure vegetables are not burnt. Remove vegetables from foil and keep aside.

For gravy:
Peel and crush garlic. Wash and rough chop basil leaves. Heat pan, add 1-2 tbs of olive oil. Add freshly crushed pepper and once it splutters add garlic and tomato passata. Add 1 tbs pesto sauce. Add salt to taste and keep stirring. Add basil leaves. Remove once start boiling. Making gravy using tomato passata is extremely simple and easy. Takes less than 5 minutes. Keep aside.

Pasta:
When you are cooking pasta always cook pasta at the end when your gravy and other ingredients are ready to mix in pasta.

Boil 2.5 times of water and add salt to taste. Once the water starts boiling add 1.5 cups of pasta in it. Cook till pasta is al-dente. Preserve 4-5 tbs of the cooking liquid and drain off pasta.

Mixing:
Mix pasta with roasted vegetable and mix well.



You can enjoy pasta without adding gravy. Just add 2 tbs of lime zest and grated parmesan cheese and serve.

I like my pasta saucy. Mix gravy to the pasta and cover the lid and let it mix well for 5 minutes without using heat. Garnish with parmesan cheese and serve.
