Potato and capsicum chips sabji

Ingredients:
Potato: 2 medium
Green capsicum: 1 medium
Ginger: thin sliced 2 tea spoon
Garlic: fine chopped 2 tea spoon
Cumin seeds: 1/2 table spoon
Cumin and coriander powder: 1.5 table spoon
Turmeric: 2 tea spoon
Garam masala powder: 1 tea spoon
Oil: 2-3 table spoon
Asafoetida: pinch

Preparation:
Wash potato and capsicum. Leave the skin on of potato and cut it into chips like shape.
Cut capsicum in the same shape.
Par boil potato by adding salt to it. Drain the water off and set aside.
Heat 2 table spoon of oil in pan and add cumin seeds. Once it starts to splutter add asafoetida. Add garlic and ginger and mix till it starts to leave flavour. This should take less than a minute.
Add potatoes. Now heat it on high flame for 3-4 minutes. Add salt to taste, cumin and coriander powder, turmeric powder and mix well.
Add capsicum once the potato are slightly burnt from the edges.
Add few drops of water and mix well. Cook until capsicums are soft. Add garam masala and mix well.

Leave it for another 2 minutes and serve with rotis.

This is good recipe for tiffin box too.
