Spicy dahi wada

This is Khandeshi style dahi wala, I learnt it from my mother-in-law. I was surprised how can you twist the recipe to make completely new dish. I have been eating Gujarati style dahi wada ever since. I love this recipe and it is a bit creative. Try it, you will love it.

Ingredients:
For wada:
Split white urad dal: 1 cup
Red chili powder: 3 tea spoon
Cumin and coriander powder: 2 tea spoon
Salt to taste
Garlic: 2 cloves
Fennel seeds: 3 tea spoon
Oil to fry

For dahi:
Plain yogurt/dahi: 1.5 cups
Curry leaves: handful
Coriander: handful
Mint leaves: handful
Cumin and mustard seeds: 1 table spoon
Salt to taste
Oil : 1/2 table spoon
Sugar: 1-2 tea spoon
Green chili and ginger paste: 2 tea spoon

For garnish:
Red chili powder
Chat masala powder (optional)
Green mint coriander chutney

Preparation:
Wada :
Wash dal with two waters and soak for 4 hours in warm water.

Before crushing the dal, wash it nicely with 2-3 water. This will make wada softer in taste.
Crush dal into coarse paste and add following and crush again.
Garlic paste, cumin and coriander powder, red chili powder, fennel seeds coarse powder and salt to taste.
Pour the mixture into a bowl.
Heat oil to fry in the pan and let it come to frying temperature.
Take a small square cloth or a plastic square. Add little water on to cloth.
With spoon make a small scoop of dal mix onto cloth
and wet your fingers and make thin round as shown in picture.
Make a small hole in the middle as shown.

Take the cloth in hand
Slowly flip it and take wada in hand
Add slowly into the oil which is ready to fry without letting the hot oil flash.

Take full care while placing the wada in the oil. If you don't place wada properly it can fold and wada won't come out in round shape.

Fry wada on medium flame and fry until golden brown.

Repeat for rest of the wada batter.
Dahi:
Add little bit water in the plain yogurt, add salt to taste, sugar, chili and ginger paste, chopped coriander and mint leaves and mix well.
Heat oil in a pan, add cumin and mustard seeds and let it splutter. Add curry leaves
and add mixture to dahi and mix well.

Mix wada and dahi:
Soak hot wada in water for about 3-4 minutes.
Squeeze the water from each wada.
Add all wadas to dahi.
Place dahi wada in serving plate and garnish with red chili powder, Green mint coriander chutney Serve hot or cold.
