Mysore masala dosa

For this recipe prepare dosa batter, aloo bhaji and dosa chutney in advance.

Makes : 4-6 dosa
Ingredients:
Dosa batter: 2 cups
Aloo bhaji for dosa: 1cup
Onion: 1 medium
Tomato: 1 medium
Green pepper: 1/2
Garlic paste: 1 table spoon
Red chili powder: 1 table spoon
Pav bhaji masala: 1 table spoon
Garam masala: 1 tea spoon
Salt to taste
Butter: 1.5 table spoon
Oil: 1 tea spoon

Preparation:
Peel and fine chop onions. Wash and fine chop tomato. Wash and de-seed green pepper and fine chop it. Peel garlic and make it into paste.
Heat the pan. Add 1 tea spoon of oil, and 1.5 table spoon of butter. Add red chili powder. This will give nice red color to the gravy. Let oil gets red and now add garlic paste and onions. Stir till onions are translucent. Add green peppers and stir for 1 minute and add tomato. Add salt to taste and pav bhaji and garam masala. Mix till tomatoes gets soft.
If you like you can also add handful of boiled peas. Add 1 cup of aloo bhaji and mix well.
Mesh everything together.

In a small bowl take half oil and half ghee. Take 1-2 tbs each should be enough.
Mix well and use this for cooking dosa.

Heat large flat pan let it heat nicely. Take a thin cloth or few tissue and soak in water and quickly wipe off the pan with the tissue. This will help the pan get more hot and when fumes start to come out of pan that's when its ready for making dosa.

Make sure your dosa batter is of pourable consistency and you have added salt and pinch of sugar and mixed well.

Take a large spoon with good depth and take dosa batter in the spoon and add all that in the center of the pan and add more if required. Now quickly move your hand in clockwise direction spreading dosa and make it thin.

Sprinkle oil and ghee mixture. 1 tea spoon should be enough. Make sure there is enough on the edges. Now take 1 table spoon of gravy and apply it on dosa as shown in the pictures as follows.



When you see dosa corner is getting dark brown that's when you know it is cooked.
Fold it as shown
Take it off on a serving plate and cut in small pieces. Serve with dosa chutney.
